This morning’s post about simplicity and French food got me thinking about Salad Nicoise. I didn’t have all the necessary ingredients, so I decided to make a Salade Nicoise-inspired Salade de Hippie for lunch.

It features organic mesclun from the Hippie farms at Ste-Anne de Bellevue on the western tip of Montreal island, Brisling sardines, a very large organic egg from a local chicken farmer, organic grilled vegetables I made fresh this morning on the BBQ, some very spicy olives and pepperoncini, and wonderful California olive oil and lemon juice as the dressing.

Very simple and extremely tasty. Quick too.
